Dom Perignon's idea is that a single vintage doesn't have one peak - it has several, each reached after a different length of time resting on its lees. Plenitude 2 is the second of these windows, released only after a minimum of 15 years, where the wine develops a richer, deeper character than the same vintage showed on its first release.
