Dom Perignon

The real Dom Pierre Perignon was a Benedictine monk, cellar master at the Abbey of Hautvillers from 1668 until his death in 1715.

He didn't invent Champagne, and he didn't say "come quickly, I am tasting stars" — that quote is a 19th-century advertising invention. What he actually did was refine the craft: better pressing, careful blending across plots, and — ironically — real effort to stop the secondary fermentation that gives Champagne its bubbles, which was considered a wine fault at the time.

The maison that bears his name today is a tribute to that legacy rather than a literal continuation of his own winemaking.
