A solera is a fractional-blending system borrowed from Sherry and Port: instead of bottling one vintage, older wine is continuously topped up with younger, so every bottle carries a trace of vintages past. It's an unusual technique to find in Burgundy at all, let alone from an eight-hectare municipal vineyard - exactly the kind of quiet experimentation Marc Soyard's arrangement with the city gives him room to try.
