Les Horees (Catharina Sadde)
Catharina Sadde trained as a chef before a single harvest in Germany's Nahe region redirected her entirely. She studied at Geisenheim and in Montpellier, then worked her way through an almost unreasonable run of top addresses — Romanee-Conti, Comte Armand, Marquis d'Angerville, Drouhin, de Vogue — before founding Les Horees with her husband Guilhem in 2019.
The estate is tiny, 1.3 hectares in Pommard, Volnay and Beaune, ploughed by horse and farmed biodynamically, with nothing added in the cellar. Her first vintage alone was enough to put her on serious Burgundy watchers' radar.
