Maison Uliz (Antoine Petitprez)

Antoine Petitprez trained as a biochemical engineer before switching to viticulture, and Uliz — his own label, first vintage 2008 — is built on genuinely old-vine fruit farmed organically or biodynamically, whole-cluster fermented and bottled unfiltered.

The twist is his day job: Petitprez is a working biodynamic consultant to some of Burgundy's most respected names, including Meo-Camuzet and Domaine Dujac. He simply never bothered marketing his own wine, which is a large part of why Uliz remains a genuine insider's find rather than a famous name.
